What is volume?
Volume is the amount of three-dimensional space something occupies; capacity is how much a container can hold. Both are measured with the same units. The SI unit of volume is the cubic meter, but the liter, one thousandth of a cubic meter, is far more common in daily life.
Volume units come in two families. Cubic units are built from length units: a cubic centimeter is a cube 1 cm on each side. Capacity units such as the liter, the gallon and the cup were historically defined by containers and are now defined in terms of cubic units: one liter is exactly one cubic decimeter, and one US gallon is exactly 231 cubic inches.
Be careful with gallons, pints, quarts, cups and fluid ounces: the US and imperial (UK) versions have the same names but different sizes. An imperial gallon is about 20% larger than a US gallon, and an imperial pint has 20 fluid ounces against 16 in the US.
Common volume equivalents
- 1 liter = 1,000 mL = 1,000 cm³ ≈ 33.814 US fl oz ≈ 1.0567 US quarts
- 1 US gallon = 4 quarts = 8 pints = 16 cups = 128 fl oz = 3.785411784 L
- 1 imperial gallon = 4.54609 L ≈ 1.20095 US gallons
- 1 US cup = 8 fl oz = 16 tablespoons ≈ 236.6 mL
- 1 US tablespoon = 3 teaspoons ≈ 14.79 mL
- 1 cubic meter = 1,000 L ≈ 264.17 US gallons ≈ 35.315 cubic feet
- 1 cubic foot ≈ 28.317 L ≈ 7.4805 US gallons
- 1 oil barrel = 42 US gallons ≈ 158.99 L
US versus imperial measures
The US and the UK both inherited English wine and ale measures, but Britain replaced them in 1824 with the imperial gallon, defined as the volume of 10 pounds of water. The US kept the older wine gallon of 231 cubic inches. As a result:
- A US gallon (3.785 L) is smaller than an imperial gallon (4.546 L).
- A US fluid ounce (29.57 mL) is larger than an imperial fluid ounce (28.41 mL).
- A US pint has 16 fl oz (473 mL); an imperial pint has 20 fl oz (568 mL), which is why a British pint of beer is bigger.
Most modern recipes outside the US use metric cups (250 mL) and spoons (15 mL and 5 mL); Australia uses a 20 mL tablespoon.
